MMMMMmmmmmmmmmmmmmmmm.........





I finally made another pot of that yummy caramel--at about 10:30 at night. What can I say--I am a mole--a nocturnal mole. Are mole's nocturnal?? It is just soooo tasty. I don't know if it's because I only make it a couple times in the fall so it is more of a treat or if it is just out of this world fantastic. I'm sure it doesn't hurt that caramel apples are one of my all time favorite foods. I would like to insert here that I got this incredible recipe from my good friend Julie--yeah Julie! I have been told that just because there is an apple involved--it is not considered a healthy snack. I have already called the emergency room and informed them of my doings so they are ready when it clogs my arteries and puts me in a sugar coma. Totally worth it.

My children are such good sports to pose for these photos. They look tired--because they are! It's past their bedtimes and their deranged Mother is making them pose for apple photos. Kelly doesn't even like caramel apples--what a sport! Go ahead--indulge---you have to try this stuff! (disclaimer to Annie--I realize this is completely non--vegan--but--love me anyways)
THE RECIPE

Caramel Sauce

Combine in a heavy saucepan:

1 pound butter (not margarine)

2 cups light corn syrup

2 cans sweetened condensed milk

Heat over medium-low. This burns easily, so stir constantly.Stir until all is melted and blended.

Then stir in:

2 pounds brown sugar

2 teaspoons vanilla

Continue stirring until mixture starts to boil. Let boil about 1 minute. Remove from heat. Can store in refrigerator for 2 - 3 weeks.

OH YEAH--this makes a LARGE amount as you can see in the photos--you can easily cut it down.

Like I said, I'm not a DIE hard vegan... so when it suits my fancy I indulge on animal proteins... I switch to a vegetarian from time to time. Basically I avoid meat ALL the time, but everything else (dairy products and eggs) can slip in every do often, but not enough to make me unhealthy!! :o) HA! (how's that for rationalizing making this stuff!!??)

It looks like I might have found our FHE treat for tomorrow!! :o) Apples went on sale here so.... it's a win/win!

Mmmm...that does look good! Makes me think of candy apples and hot cider. I only like caramel when it's warm and used for a dip-fantastic!

WOW! I think we are having this for family home even tonight! BUT I'm only making enough for one night (because I will eat the whole bowl myself-with or with out apples!!) Yummmmm
